This is cooked in the microwave in minutes.

SYRUP SPONGE PUDDING

2ozs. Unsalted butter
2ozs caster sugar
1egg, beaten
2tabsp full fat milk
E self raising flour
3tabsp golden syrup

In a large bowl, beat together the butter and sugar until smooth. Combine with the egg, then slowly add the milk and flour, folding gently.

Put the syrup in the base of a microwave safe bowl, then pour the sponge mixture on top. Cover and microwave on full for 3-4 minutes until the mixture just firms. Allow to stand for 5 minutes, then tip out and serve with custard.

This serves 4

Vary the topping, it works well with jam, marmalade or treacle.

Sorry, but I didn't let you know how much SR flour to add. It should be 2 ozs.
